Juan Diego Solombrino was born in Guatemala, where he originally discovered his interest in food and cooking.
Over his 16 year long career, he has created his own signature dishes which have been deeply influenced by a keen understanding and appreciation for fresh, natural produce and the rich flavours of mediterranean and asian fusion cooking.
