CHEF JUAN DIEGO SOLOMBRINO

Born in Guatemala, where he originally discovered his interest in food and cooking.

In 2002, he moved to London, where he worked for 4 years at the Savoy Hotel, where he received a scholarship to complete his degree in Culinary Arts at Thames Valley University.

In 2005, he began working as a freelance chef at The Copthorne Hotel, South Wales and London Hilton Hotel.
A desire to expand his horizons and knowledge took him to Hong Kong, where he was offered an internship at the Island Shangri-La Hotel.

There he was able to work at the two star Michellin French restaurant Petrus.

In 2007 he pursued his talents and career further after moving to Madrid where he opened 2 small family deli-restaurants.

In 2009, he arrived in Playa del Carmen, Mexico, fulfilling his dream of opening his first Fine Dining, International Restaurant – COCINA 38.

After Cocina 38, he partnered up with his two best friends, Juan Luis Wehncke and Christine Bertrand on their first team venture together to open El Racó -coffee & design corner.

In 2011, his experience and his desire to create a new concept in Mediterranean & Asian Fusion sent him on a new path and from there IMPREVIST was born!

In 2013, along with his partner he opened PLANK – Gourmet Grill & Patio Bar, which introduced a new concept for the area featuring an upscale NYC style and a unique cooking method, yet to have been introduced to the area, utilizing ancient techniques of cooking and serving food directly on flavor infused Wooden Planks and Himalayan Salt Planks.

And now he introduce his new smoking concept.
